Apple cider vinegar has been made the same way for thousands of years and asked to do a great many things in the last ten. Here is what it actually is, what the acid does, and how to drink it without regretting it.

What apple cider vinegar actually is

Apple cider vinegar is the product of two fermentations, one after the other. Yeast turns the sugars in apple juice into alcohol, then a group of bacteria called Acetobacter turn that alcohol into acetic acid. Cider becomes vinegar. The word itself comes from vin aigre, sour wine.

Acetic acid is the active compound and the reason for everything else on this page. It is what makes vinegar sour, what preserves food, and what almost all of the research is actually about.

The mother is the cloudy sediment in unfiltered vinegar: a colony of the bacteria and cellulose left behind by fermentation. It is a sign the vinegar has not been filtered or pasteurised, which is genuinely worth knowing when you are buying. What it is not is a separate active ingredient, and no trial has isolated a benefit belonging to it rather than to the acid.

This is the most thoroughly tested thing vinegar does, and it is unusual among wellness ingredients in having a clear, repeatable mechanism behind it rather than a vague association.

What makes this finding credible is that the mechanism is understood. Acetic acid slows how quickly the stomach empties, so food arrives in the small intestine more gradually and the glucose curve that follows is flatter. Three things worth knowing about how it behaves. The effect is a post-meal one, so timing matters: vinegar taken with or just before food is what the trials tested. It shows up most clearly alongside high-carbohydrate meals, which is where there is the most to flatten. And the trials are generally small and short, measuring single meals rather than months, so this is a well-evidenced immediate effect rather than a demonstrated long-term one.

It is also genuinely medical territory. If you take insulin or medication for blood sugar, vinegar is something to raise with your doctor rather than add on your own.

Apple cider vinegar and digestion

That same slowing of the stomach is the most plausible explanation for the fuller, more settled feeling people describe after a vinegar drink. It is the oldest reason anyone gave for taking it, and the one modern measurement supports best.

Vinegar has also been used to preserve food for as long as it has existed, because acetic acid makes an environment most spoilage organisms cannot live in. That is not a health claim, it is food chemistry, and it is why a vinegar-based dressing keeps and a creamy one does not.

Does apple cider vinegar detox your body?

No, and nothing else does either. Your liver and kidneys clear waste continuously, without instruction and without assistance, and there is no evidence that vinegar cleans your blood, your gut or your organs.

The related belief, that vinegar can treat an infection, deserves the same clarity. Acetic acid is a capable antimicrobial outside the body: on a work surface, on food, in a pickle jar. Laboratory studies show vinegar slowing bacteria and fungi in a dish. None of that has been shown to happen inside a person, and using vinegar in place of antibiotics or antifungals is the kind of substitution that causes harm.

The honest version is more interesting than the myth: this is a preservative and a cleaner of remarkable pedigree, which is a real thing to be.

How to drink apple cider vinegar

This is the practical part, and it matters more than most of the research.

Vinegar is acidic enough to soften tooth enamel, which is why the standard advice is never to drink it neat. That advice is sound, and it is worth understanding rather than just following: enamel begins to demineralise below about pH 5.5, and vinegar sits well under that.

Contact time is what damages enamel, not the sip itself. Anything acidic is better taken quickly than nursed.

What happens if you drink apple cider vinegar every morning?

Diluted and taken sensibly, not a great deal beyond what is described above. There is no evidence that the morning is better than any other time, so the useful question is which time you will keep up.

Does the mother matter?

It tells you the vinegar is unfiltered and unpasteurised, which is a reasonable thing to want. No trial has attributed a specific benefit to the mother itself rather than to the acetic acid.

What are the benefits of drinking warm water with apple cider vinegar?

Warm water dilutes it, which is the part that matters. The temperature itself changes nothing, though it does make the sourness easier to take.

Does apple cider vinegar cure infections?

No. It is antimicrobial on surfaces and in food, and that has never been shown to translate to treating an infection in a person. Infections need proper treatment.

How much apple cider vinegar is too much?

Common guidance is to keep to one or two tablespoons a day, well diluted. Beyond that the reported problems are throat irritation, worsened reflux and, at sustained high intakes, low potassium.
